- Chef's welcome: Glass of bubbles and Foie gras paté, sesame caramel and Garda lemon soup
• Terrine of sturgeon in three accompaniments of mayonnaise: mango and ginger, beetroot and bourbon vanilla, horseradish and celery
• Risotto with artichokes, goat cream and scampi tails shaded with Brandy
• Agnolotti with duck and rosemary on a black truffle sauce and a reduction of Tawny Port wine
• Recioto Fiorato wine sorbet
• Collar chop of suckling pig glazed with honey, orange shallot sauce and "new bridge" potatoes
• Amaretto meets mandarin: Amaretto biscuit, mandarin mousse and its gelée
